Colour: Deep golden straw.
Nose: Candied pear and apricots with hints of citrus peel.
Palate: Luscious palate with apricots, mandarin and white peach. Fruit sweetness is balanced by a refreshing finish.
Cellaring Potential: Will continue to develop with age for several years.
Winemaking: The fruit was left to hang of the vines until the very end of vintage with picking occurring in late May. This extended time on the vine allowed the Botrytis Cinarea to set in and concentrate the sugar in the berries. The fruit was whole bunch pressed followed by cold fermentation. The fermentation was arrested early with grape sugar and alcohol added back to create the final blend.
Food Matches: Perfect with fresh walnuts, blue cheese, fois gras, poached fruits or slow cooked quinces. Superb as a well chilled aperitif.
